Most allergy tests check whether you react to a whole food or substance — for example, whether you have an IgE response to apple. This is a useful starting point, but it misses a critical piece of information: which specific protein within the apple is triggering your immune system?

For example, within apple there are several different molecular allergens — Mal d 1, Mal d 2, Mal d 3, and Mal d 4. Each has a very different clinical significance. A reaction to Mal d 3, however, is associated with a much higher risk of systemic reactions.
